How Paulies Coal Fired Pizza Came to be
In 1998, the Carrabba family moved from Long Island, New York to the state of South Carolina because of the beautiful weather it had to offer. Well the parents, Angelo Carrabba (native of Brooklyn) and Carolyn Carrabba (native of Long Island) soon realized that there was no authentic fresh tasting, mouthwatering pizza to be found. One day Angelo heard his youngest son Paulie say,” Dad, Lets order (National Brand) pizza, it taste good.” When he heard Paulie say those words, he immediately went to the store and bought fresh tomatoes, fresh mozzarella, pizza dough, and a baking stone. When he came home he told his two sons Andrew and Mathew to try and make a pizza. Well, they did just that, they had created a mouthwatering, hot, and delicious pizza pie.
After that, the Carrabba family would invite guests to come to the house and Andrew and Matthew would cook pies for everyone, while at the same time perfecting the art of pizza making. People loved the pizza and told Angelo that he should open a pizza place because his sons make the best pizza in town. As a family, they thought about it and as opportunity allowed, they decided to do it. When the restaurant was under construction, they needed to decide on a name. They decided to call the place Paulies Coal Fired Pizza, naming it after the youngest son, who at the time was 3 years old. The family felt that this was a perfect name to use because Paulie would always be with his older brothers helping them to make pizzas at home and if it wasn’t for his comment to his father, the family would have never made pizzas in the first place.
Every day, Andrew and Matthew studied the art of Italian cooking and pizza making and had come up with many recipes that you will find on the menu today. Their Mother and Grandmother helped to create Italian recipes for the place, such as the meatballs, eggplant parmesan, and the marinara sauce.
They decided to use real anthracite coal from Pennsylvania to cook their pizzas, because it gives off a great flavor and is part of Italian pizza making heritage. Also mostly everything on the menu is made from scratch including the Italian bread which is made daily!
The Carrabba`s want every one of their customers to feel like part of the family. This is why they provide a fine dining family atmosphere that you usually won`t find in a pizza place, that’s what makes it unique. So here you have it, Paulies Coal Fired Pizza! Enjoy!
